Oat bran muffins that you’ll look forward to (I kid you not!) – these are quick to throw together, smell delicious in the oven and the taste is divine! The recipe makes 12, but after a few days of rainy weather (misery to get a food shot) this was the best I could do. The deserved a better photo, ha ha. Give them a whirl, I think you’ll love them!
I remember making Oat Bran muffins long ago, a recipe on the back of the Quaker Oat Bran cereal box (a hot cereal). I couldn’t find this variety at the store but did find Bob’s Red Mill Oat Bran hot cereal at Whole Foods. This recipe was on the back of the bag. What a delight! Note one of the ingredients, whole wheat pastry flour, is a nice addition – I found it at Whole Foods as well. Don’t skip the dates, they’re perfection in this muffin. To make your life easier, buy the CHOPPED DATES. I’m sure you can throw in other additions. My husband didn’t want walnuts so I left them out of half of the muffins. I wanted nuts in mine, so next time I might even add the full amount and add to half the muffins (double the nuts) = more protein, right? Bob’s Red Mill Oat Bran Muffins
Dry Ingredients, mix together in small bowl:
- 3/4 cup whole wheat pastry flour
- 3/4 cup oat bran cereal
- 1/2 cup brown sugar
- 1 teaspoon baking POWDER
- 1 teaspoon cinnamon
- 1/2 teaspoons baking SODA
Wet Ingredients, mix together in large bowl:
- 1/3 cup mashed banana (about 1 small/medium)
- 1/2 cup plain yogurt (I used Greek vanilla/cinnamon)
- 1 egg
- 2 tablespoons oil (I used avocado)
- 1/2 teaspoon vanilla
Fold In:
- 1/2 cup shredded carrot
- 1/2 cup chopped dates
- 1/2 cup chopped walnuts
OVEN 400℉.
Mix dry ingredients. In a separate bowl mix the wet ingredients. Add the dry ingredients to the wet ingredients and stir just until moistened.
Fold in carrot, dates and walnuts.
Lightly grease muffin tin or use paper cups. I did both, I added paper cups and wiped each with a paper towel dipped in avocado oil so it would come out of paper easily. Fill each cup 2/3 full.
Bake for 20 minutes. Makes 12 delicious muffins.
