CHICKEN HUMMUS PITA inspired by Eating Well

First pictured as written in Eating Well. Second image in a pita. Same ingredients can be used. In the pita for this version I did not use chicken. The pita is still full of protein and veggies, so as a quick lunch this is the best! This is so similar to something we’ve been eating for the last few years now. At least one meal/day seems to be filled with hummus/pita/veggies. When I do add chicken to the mix, I usually just use olive oil/S&P. The additional spices in the Eating Well recipe were nice as was the lemon. This recipe is bursting with flavor as well as numerous health benefits. (Recipe link below) – I always make a recipe the first time as written and another time or two before writing my Sticky Note version with the changes I made and ways to simplify the process. They will be strikingly similar, either way, you can’t lose. Absolute heaven in each bite – you will long for this day after day. Trust me.

Fresh Food Never Tasted So Good!

I always feel hurried when I’m taking photos of my breakfast/lunch/dinner to share with y’all. Mostly, because Fred is sitting at the dining room table ready to eat. So forgive the thrown together plate – this was fabulous. Fresh food after several days of leftovers, thanks to Tropical Storm Debby. Not complaining, the leftovers were good, but we were really looking forward to something fresh!

A quick and delicious ZITI recipe!

Ziti. Especially a quick ziti is pure comfort food. Comfort food when you need it like during the threat of 20-30″ of rain from a tropical storm. I figured if I whipped this together, we would have dinner for the week (it’s supposed to rain for days). Pulled it out of the oven and AHHHHH. Yum! Too good! A Restaurant To Check Out in Charleston, SC!

There is a wonderful restaurant in Johns Island, South Carolina (Charleston outskirts) that needs to be applauded for their extremely good salad (and oh, their salmon is out of this world and I’m not a big salmon eater!) – it’s a small place (good to make a reservation) with excellent food. It’s consistently good, which is so important!

Summertime Dinner!

Charleston, South Carolina. It’s hot. I love to have dinner ready early so I don’t need to be in the kitchen when it’s at its warmest. This was a wonderful meal, prepared ahead (except for the corn, which took 6 minutes). You could easily substitute a salad or whatever else you like. Everything here literally took minutes and is the freshest of the fresh!

The Perfect Meal for a Hot Summer Day!

The flowers sure made everything look extra special! The hot days of summer are upon us. I don’t use the oven much, if ever, in the hot months. I rely on the grill (my husband), cold salads, quick meals that will keep us cool while taking advantage of the most amazing produce available at the time. It’s Green Smoothie Weather!

The weather is beginning to heat up in Charleston, SC – which makes the perfect weather for enjoying a nice smoothie.
