Throwback Recipe: SHRIMP FRIED RICE!

Shrimp Fried Rice

I had forgotten about this fabulous recipe, which I first saw in the House Calls magazine from Roper St. Francis Hospital (RSF Fall 2013). This Shrimp Fried Rice recipe is outstanding and I’m thrilled than I ran across it again! Now it’s on a more regular rotation! Especially with the abundance of fresh shrimp so readily available. This recipe is a WINNER!

This dish comes together quickly, especially if you use a packed of frozen rice. I use Trader Joe’s Organic Brown Rice. One packet is approx “3 servings” – but works great for this recipe! Thaw it first… but keep it cold!

Also note! I avoid soy sauce – someone told me about Organic Coconut Aminos Seasoning Sauce from Trader Joe’s – it looks like soy sauce, smells like it, but… no soy! I’m hooked!! Give it a try if you also avoid soy!
