
This time of year (at least here in Charleston, SC) ripe tomatoes and fresh basil are abundant. This is the time of year to include these ingredients in just about everything!
I wrote a post a while back about this delicious sandwich, the CAPRESE sandwich. I start with a Ciabatta roll (Trader Joe’s or Whole Foods is usually where I find mine), fresh mozzarella, good sliced tomato (I like to use heirloom tomatoes if I don’t see local tomatoes) and fresh basil from a pot in the backyard.
I drizzle the bottom of the ciabatta roll with olive oil and balsamic vinegar. Slice the tomatoes and fresh mozzarella and place it on top of the bottom of the roll, place some basil leaves on top (they add such flavor!) Then add the top of the roll (can add an additional olive oil/balsamic drizzle to the top as well, although I find I don’t really need it.) Tada! That’s it!
Hint: I don’t buy the cheapest balsamic – I buy a good one that isn’t too expensive, it adds a lot of flavor to this sandwich! ENJOY!!
This sandwich is what spring/summer should taste like. Fresh, delicious, good on a hot day, fast to prepare, and oh so good!
