Spring/Summer Pasta – Quick & Easy!

The temps are getting a bit warmer and the humidity is starting to creep up… What to do for dinner? Well, I don’t know about you, but one thing NOT to do is to turn on the oven. It seems to heat up our kitchen and ugh, makes me not want to eat. So I was trying to think of something quick to throw together with fresh ingredients…

This was delish! I think the spinach pasta added to the delightfulness of this meal, but I’m sure would be good with whatever pasta – next time I make it I will stick with spinach though.

SPRING PASTA with chicken, spinach pasta and fresh corn

Yield: 2 servings

I N G R E D I E N T S

  • SPINACH PASTA 6oz – I used spaghetti (shape)
  • CORN 1 ear, husked and cut off the cob
  • OLIVE OIL, to drizzle over pasta
  • Parmesan Cheese, grated
  • GROUND PEPPER
  • CHICKEN BREASTS, boneless/skinless – 2 fairly small ones coated with olive oil, S&P – grilled until done, then sliced

D I R E C T I O N S

Cook pasta according to package instructions for al dente (firm to the bite)

Grill the chicken breasts (boneless/skinless) we used a gas grill, you can use a charcoal grill or a grill pan, or if you are without feel free to pan sauté in olive oil. When he brought them in they were utter perfection, high five Fred! Let them cool a few minutes then slice them up (I use kitchen shears) – square pieces of chicken freak me out, so I randomly slice.

Cook the pasta, then give it a quick drain and dump it into a big bowl. Next, drizzle with olive oil and a little grated parmesan and a good bit of black pepper. Scoop the pasta into two dishes, top with sliced grilled chicken and fresh corn – then add a good sprinkle of parmesan (which I use in lieu of salt) 😉
