A Lighter Lunch After the Holidays!

Do you need a lighter lunch after the holidays? This is it!

I can say, for the second year in a row, we didn’t eat a heavy meal, ha ha… but still, this is so refreshing it’s crave worthy. Using the freshest of ingredients, it comes together quickly and you will be delighted how good it is (and how long it keeps you satiated!) #winwin

I start out by grating a little cheese, whatever you like, I’ve used havarti, sharp cheddar, colby jack – really, anything you like. I chop up some red cabbage (no strong cabbage taste, but a fabulous crunch! I slice a few small tomatoes, slice an avocado, chop some cilantro (if you have it), peel and slice a cucumber. Now you’re ready for assembly:

Heat a tortilla (I heat over a gas burner) flip to heat both sides until hot. I do a smear of mayo and Grey Poupon Deli Mustard (about 1 teaspoon of each) down the center of the wrap, sprinkle some cheese and then arrange your veggies. Add anything you like! Then, I fold up at the bottom a wee bit and fold my left side towards the right and roll it so it’s neater to eat. Fred usually packs his quite full and eats it like a taco (you will need a fork, ha ha). No matter how you do it – it’s delish!

And… it feels good to eat lighter after a heavy meal.
