Avocado Toast – So Good!

Quick and Easy…

Avocado Toast. Is it not like a slice of heaven? The creamy avocado, the drizzle of olive oil and whatever else you may add. It’s so delicious on a slice of toast – keeps you full for a while and is just delicious. You don’t need to pay $8 and up for something so quick and easy. This is a version similar to one I had in a restaurant.

Start with a good piece of bread to toast. Not white bread, preferably not processed, something from the bakery section is your best bet. I used 7 grain bread. I’ve made several versions, right now this one is my favorite.

INGREDIENTS:

Bread for toast

Avocado, slice in half, then I use a spoon and cut (while still in the peel) both directions, kind of mushing it up. If you prefer it sliced, you can do that, but it will sometimes slide off your toast, ha ha… Or you can place the two halves in a bowl and mush with a fork, then spread on the warm toast.

  • Place some cut tomato (whatever kind you like)
  • Drizzle olive oil
  • Squeeze a wee bit of fresh lemon juice
  • Salt and Pepper
  • Za’atar seasoning (if you have it)

That’s it! Now it’s time to savor the fruits of your labor, ha ha. Enjoy every bite!
