I bought two ripe mangos and cut them into small pieces. If you aren’t sure how, take a minute to read this by, Simply Recipes (video included!) so you do it right, otherwise it can be a nightmare, this makes it quick and easy. I added a little minced red onion, cilantro, a good wedge of lime squeeze, pepper and a wee bit of salt. I stirred it together and covered it and put in the fridge for about 30 minutes, then I took it out while the chicken was on the grill. We buy Bell & Evans Thin Chicken Breasts. They’re like cutlets and they cook quickly. They are perfect for the grill because they’re done in no time. See the link above for the Cilantro Lime Chicken marinade, it’s a winner!
