Yogurt cake. Sound intriguing, right? Let me tell you, this gem of a recipe is fabulous! I’m not a “cake person” but my husband is. Since this has (full fat) Greek yogurt I thought it was a better choice than a recipe loaded with butter. So I tried it. I was leery. IT IS AMAZING! AND, it can be made in a variety of ways – Here are a few:

Lemon Glazed Yogurt Cake

As mentioned in the recipe by Simply Foods for Yogurt Cake – it can be eaten as is, sprinkled with powdered sugar, or a glaze can be added. I always like to try a recipe like it is to start with. It was good. I served it with strawberries, which was nice. The texture is out-of-this-world!

After reading the many (glowing) reviews for this cake, I thought I would try adding a little lemon juice (about a teaspoon) and lemon zest (one lemon) – next time I could add less vanilla and more lemon. I added a glaze that I found for another cake (citrus) so I used that and it worked beautifully!

G L A Z E – drizzle over COOLED cake and let sit (will harden) – what a delight!

Mix 3/4 cup confectioners’ sugar with 1/2 teaspoon of freshly grated lemon zest and 3-4 teaspoons of freshly squeezed lemon juice.
