Recipe Reminder: 15 Bean Soup!

15 Bean soup soaking – an important step – overnight or quick method…

We’ve had a few cool days/cool evenings – and that prompted us to find a recipe that was more fitting for this time of year. We have had four+ months of grilled food and salads. Now is the time for wonderful homemade soups and recipes that actually utilize the stove/oven. Woohoo!

The recipe for Vegetarian Bean Soup is delightful, it’s fun to make and it’s easy – click HERE for the recipe. I like to have a lot of the ingredients on hand so when you’re thinking about what to make for the week you can throw this together, and for the two of us, this will last several days. Sometimes I serve with crusty bread and sometimes with a salad.

Note: if you see this and would like to make this today (therefore no time to soak beans overnight), after you clean/rinse beans – add them to a pot with 6 cups of water. Bring to boil for 3 minutes. Then remove from heat, cover and soak for 1 hour (or longer would be better, but one hour will work!) Then rinse, drain beans and start the recipe!

All good and healthy ingredients – be sure to toss the seasoning packet 😵‍💫 you won’t need it (and if you read the ingredients for most brands you will be more apt to drop the seasoning packet for sure).

This will make your house smell like fall and pure tastiness. I only made a few changes from the original recipe, so you have options! Happy cooking!
