
Looking for a quick and easy lunch or dinner idea? I have one for you – especially if you whip together some tzatziki first. I posted a recipe for it not long ago and trust me, it’s a keeper and works perfectly in this tasty dish! It takes it from ho-hum to WOW!
I like Trader Joe’s pitas, they’re not too dry. I heated them in a skillet with a few drops of water (covered) about 30 seconds on each side and then over an open flame for about 10 seconds – this was a preferred method that I had read about. The next day, we had a little tzatziki leftover and a pita, so I tried just heating over an open flame, keeping the pita moving so it wouldn’t burn. It was HOT and it was fabulous!
Once the chicken has been grilled (we usually just spread olive oil and pepper, but you can marinate it in olive oil, pepper and garlic if you like), after it sits for about 5 minutes, slice it up. Also slice a few tomatoes, use some good lettuce not too strong (I made this with arugula and it wasn’t the same), open some feta to sprinkle on the pita.
Slice a warm pita in half and open up to stuff the pocket. It’s probably best to start with a slathering of tzatziki, then add: chicken, tomato, feta and lettuce. Plop a little tzatziki on the side in case you need it.
Yum, what a treat this meal is!
The next night we had brown rice, kale and sweet potatoes with an egg on top. I had an extra pita and a spoonful of tzatziki, so I warmed the pita, cut it up and we spread tzatziki as a side. What a delight!
