Asparagus. As a kid I never liked asparagus. Maybe because they were mushy (canned)? I’ve never been a fan of cooked-to-death veggies. I love a crunch. So I’m good with them cooked as little as possible (unlike meat – right or wrong, I go in the opposite direction there – I like meat cooked)! Never in my life have I eaten as much asparagus as I did this year…

A Quick & Light Salad = Perfect Lunch!

This salad happened by mistake one day while I was baking – I had an orange that had been zested, so I needed to use it. I was also hungry, ha ha… So, I was thinking how to incorporate the orange into my lunch. This was perfect. Fresh, delicate, with a bit of crunch – the vinaigrette was OUTSTANDING!

Do you ever get in a rut with recipes? We do. It seems like I’ll make the same dinners over and over for a while because they sound good, taste good, etc. However, it’s SO NICE to branch out and find something different on occasion. This recipe is healthy, came together quickly and I made a nice side to go with it. We ate it for two nights. (#winwin)

I have seen Jeni’s Ice Cream at grocery stores, and remember driving by a Jeni’s in Charleston, SC (always with a long line of customers), but I never tried it. After talking with a neighbor (ALMD, you are responsible for this, ha ha) – and after recuperating after a cold, where nothing seems to taste good – Jeni’s sounded fabulous!

Baked Eggplant Parmesan – So delish!

This Eggplant Parmesan tastes like lasagna minus the pasta and a good bit of the fat

I have an Eggplant Parmesan recipe that my mom made (recipe from a Detroit cookbook) – a winner, but I wanted to try a version without frying the eggplant. I found one – everything about this dish was so good, and made a full 9×13″ pan. The dish was hearty, so I made a cucumbers/Greek yogurt side dish – an all time summer favorite.

A Green Smoothie – that doesn’t taste green!

Green smoothies. Many are very (very) green tasting, some are very acidic, I just haven’t found one I love, until now… I took the green smoothie recipe from Vitamix and changed it a bit. It came out delightful (and packed with goodness)! With just a few ingredients and the flip of a switch, breakfast is served!
