It’s always a treat to come up with something quick and so delicious. Easy? Yep, it’s that too. I almost always make my own vinaigrette’s (oh, I have a good one coming next week!) – I mentioned this Greek Pasta Salad recipe in a Thanksgiving post. I mentioned that I try to take something (having a food allergy) that I can eat if it turns out there isn’t something that I can be sure is allergen-free. Funny thing, we were recently in Michigan visiting family. We ran to a cool pottery place (more on that in a future post) and passed this fabulous restaurant on the way home. We love Greek food but some places are far better than others and this is one of those places. We were there early and quickly the restaurant filled up with people. It was a weekday, most all were older, gathering around and having a good time. I loved seeing what they ordered, everything looked fabulous – including the “oompah cheese” as I used to call it, which is SO fun and delicious – I didn’t order it this time, but it was fun to watch.

This soup is FABULOUS! It warms the house and smells divine. I LOVE soups with coconut milk (especially versus heavy cream!) – the coconut milk adds such a nice, subtle wonderful taste and the spices that go with coconut milk… #ohlala! Once you get all set up (chopping, etc.) this goes fairly quickly… it’s not an all day soup.

My husband loves baked chicken. “What would you like for dinner?” Baked chicken. Nearly every time. He loves the crispy skin which tastes like fried chicken. I use bone in/skin on chicken breasts. Homemade granola is a heavenly treat. If you’ve never had it now’s your chance to whip a batch together, share with friends, or freeze for later. I put it in Ball canning jars and it stays fresh until it’s gone (about a week?) – pictured I have my lunch: plain Greek yogurt with fresh blueberries, strawberries, raspberries, blackberries and mango with a sprinkle of granola (and sometimes a few dark chocolate chips, like maybe 7) – whoa! A power meal that keeps me full for a long time!

I like to keep recipes on the healthier side at least a majority of the time, it’s why I’m such a big fan of Eating Well’s recipes. They are over the top good and in most cases they’re quick to put together. This recipe makes four servings, so I usually freeze two meatloaves that are partially baked, then either only make 1/2 the potatoes and green beans OR I use the leftover veggies for a different meal.

In the pita for this version I did not use chicken. The pita is still full of protein and veggies, so as a quick lunch this is the best! This is so similar to something we’ve been eating for the last few years now. At least one meal/day seems to be filled with hummus/pita/veggies. When I do add chicken to the mix, I usually just use olive oil/S&P. The additional spices in the Eating Well recipe were nice as was the lemon. This recipe is bursting with flavor as well as numerous health benefits. (Recipe link below) – I always make a recipe the first time as written and another time or two before writing my Sticky Note version with the changes I made and ways to simplify the process. They will be strikingly similar, either way, you can’t lose. Absolute heaven in each bite – you will long for this day after day. Trust me.
