Sometimes it really pays to think ahead, especially in this heat. When you know you’ll have a long day and won’t feel like cooking when you come home, make a plan. A while back I knew we were going to be gone for quite a while. The heat is on, and I knew when we got home there would be no oomph to whip something up. So, I whipped this up the day before. HAPPY DANCE! What a lifesaver to have something ready when you arrive home. Just sit down and enjoy. So quick and easy – PERFECT for hot weather!

Making Vegetable Broth from Frozen Scraps! #bestever

A while back I had read about freezing your veggie scraps, then making homemade vegetable broth with them. I had two bags full of veggie scraps. I worked hard to have a good mix. Nothing that would give the broth a bad taste (i.e. cruciferous veggies) or be too soft (zucchini), etc. It came time to make the broth, I had a freezer bag jam packed. If You Can’t Stand the Heat, Get Out of the Kitchen (Literally)!

Summertime Dinner!

Charleston, South Carolina. It’s hot. I love to have dinner ready early so I don’t need to be in the kitchen when it’s at its warmest. This was a wonderful meal, prepared ahead (except for the corn, which took 6 minutes). You could easily substitute a salad or whatever else you like. Everything here literally took minutes and is the freshest of the fresh!

We had an extremely hot and humid summer here in Charleston, SC this year (as did much of the country). So after Tropical Storm Lee blew through the area we were left with nicer temps and less humidity. After avoiding the stove/oven for months on end, we’re putting it to good use while we can. Time for this (quick) Green Chicken Chili. It will quickly become a favorite. One night we have baked chicken (and bake extra) and then in the next day or so we make the Green Chicken Chili. Tasty!

Capital Hill Bean Soup Recipe (AKA “Senate Soup”)

This recipe came at a perfect time! “Senate Soup” was a delight to make and made the house smell amazing. Not too many ingredients, and the few that are in this recipe come together beautifully. A nice warm bowl of comfort food… Cooking Light’s highly rated BAKED POTATO SOUP

Cooking Light’s Baked Potato Soup

Sometimes I just want a nice hot bowl of comfort food. This is the ticket. It’s one of the best soup recipes from Cooking Light magazine. The taste is out of this world. It’s not terribly time consuming to make. The last time I made this soup I baked the potatoes while I had the oven on for a meal the day before, so it was quite fast to throw together. This is one of those recipes that makes your eyes roll back in your head, ha ha… too tasty! Trust me, you will love it. The only the I did differently is the I halved the amount of flour so it wouldn’t be quite so thick. I think the essential part of the soup is adding cheese (I used 2% Cracker Barrel Extra Sharp), crumbled CRISPY bacon and green onions (or chives). Let me know how you like it! Baked Potato Soup

Ingredients

  • 4 baking potatoes (about 2 1/2 pounds)
  • 1/4 cup all-purpose flour
  • 6 cups 2% reduced-fat milk
  • 1 cup (4 ounces) reduced-fat shredded extrasharp cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup reduced-fat sour cream
  • 3/4 cup chopped green onions, divided
  • 6 bacon slices, cooked and crumbled
  • Cracked black pepper (optional)

Preparation

  • Preheat oven to 400°.
  • Pierce potatoes with a fork; bake at 400° for 1 hour or until tender. Cool. Peel potatoes; coarsely mash. Refrigerate if not using same day.
  • Lightly spoon flour into dry measuring cups; level with a knife. Place flour in a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 cup cheese, salt, and 1/2 teaspoon pepper, stirring until cheese melts. Remove from heat.
  • Stir in sour cream and 1/2 cup green onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Ladle 1 1/2 cups soup into each of 8 bowls. Sprinkle each serving with cheese, green onions, and crispy bacon. Garnish with cracked pepper, if desired.

This is a delight and makes quite a bit. Oh, do I miss the Cooking Light magazine…

Baked Potato Soup with all the trimmings!

Sometimes when you’re chilly there is nothing like a nice hot bowl of soup to get your innards warmed up. Other than vacuuming, there really isn’t anything that is going to warm you up from the inside out!

This tasty soup is from Cooking Light, and although it uses lower fat ingredients, if no one told you there were lower fat ingredients, I promise you, you would never know. NEVER. KNOW. That’s part of what makes this such a good recipe. It’s a fairly quick soup to make after the potatoes are baked. Mmmm, this is looking too good right now!!

So, if you were sitting there thinking… Ugh, I’m in a rut and need to try something new but want it to be pretty healthy, hey, this is for you!

I use Cracker Barrel 2% Extra Sharp cheese, it’s great, and it’s my “go to” cheese for recipes. It’s in every grocery store in Charleston, but I know other areas don’t carry it (Algonac, MI, darnit!). Serving size is 1 1/2 cups and let me tell ya… you will be full! Especially after adding a sprinkle of shredded extra sharp cheese, some green onions and some crispy bacon… oh la la… I edited the recipe to show less flour, otherwise it was too thick for us.

BAKED POTATO SOUP  

Baked Potato Soup

Ingredients
