Something quick to make for dinner – I love this!

Blurry photo… we were hungry, ha ha…

What happens when you plan on having something for dinner, but it doesn’t work out for whatever reason?

You throw a chicken breast on the grill (rub the chicken with olive oil first). Cook some brown rice (YAY Trader Joe’s Organic Brown Rice in the freezer section – takes 3 MINUTES in the microwave)! Drain and heat some black beans, cut up tomato and onion (or we used Pico de gallo, so nice and fresh!), a few shreds of Pepper Jack cheese, some steamed spinach, a healthy dose of lime and a tortilla chip or two (or three) for a little crunch, and the grand finale… sliced avocado – which totally makes this heavenly… and BAM! Dinner. Is. Ready! Let me tell you… this is so good, you’ll want it the next day! We had it the day before with shrimp instead of chicken. That was great too!

Salmon Recipe – Perfect for those of you who don’t think you like salmon!

ArtFoodHome.com | barbara stroudThis is a Bobby Flay recipe (from Bobby Flay’s Boy Gets Grill) – I first read about this recipe when I Googled “Salmon Recipes for Non Salmon Lovers”. A blog called FoodCrave featured this recipe – and I really liked the info they gave. They cooked it longer than the original recipe called for, which I liked (5 minutes on each side) AND they used a cast iron skillet! Perfect, since I don’t have a grill pan.

The original recipe was posted on Epicurious, this is where you can print the recipe without all my blah, blah blah…

Fred cooked it 5 minutes on each side like I mentioned, then we put the topping on, and stuck it under the broiler for less than a minute – wow! And I didn’t think I liked salmon :) He got the pan nice and hot, and had coated the salmon with olive oil and WOW what a nice crispy top that made!

Health Starts Here and it couldn’t be more beautiful!

You may remember a while back I mentioned that Fred and I are currently on a customer advisory panel for Whole Foods Market. We have learned so much. It lasts for six months (once a month), this is the fourth month and the subject was healthy eating… and an introduction to their Health Starts Here program. They prepare food that is so very scrumptious, then give you time to eat and chat, then there is a talk. Sarah Jane at our local Whole Foods (Mount Pleasant, SC) was so interesting to listen to, and full of great tips and suggestions for healthy eating.

They also gave us a great booklet THE HEALTHY EATING HANDBOOK – it’s FULL of great information, recipes, guides (ideas for smoothies, breakfast bowls, dinner bowls (which we are hooked on right now!), salads, etc. – Click on the link to download!

Also note the BULK BASICS booklet… full of great info on all the different types of beans, whether you soak or don’t soak, the ratio of beans to water, how long to cook, etc. More than beans… so pick one up if you’re in the store!

The Health Starts Here program that Whole Foods Market has started helps take the guesswork out of eating healthy!

I had a white bean dip and an avocado dip with veggies, a scrumptious wrap, lentil chili, a wonderful salad with avocado vinaigrette, and raw apple crisp that was out of this world! I was so full. How often do I eat this many veggies at one sitting? Hmmmm, never! But this showed me that it was possible, and we’ve been adding so many more fruits/veggies ever since this meeting!

Healthy eating is much easier when you get an idea of some of the foods that you should choose… If you have a Whole Foods Market in your area, you’ll see some foods are labeled in the salad/hot bars, prepared food secretion and the self serve prepared meals with a Health Starts Here logo – if you see that you’ll know it’s good for you, and that it was prepared without any extracted oils/processed fats, they only use the healthier sources of fat… nuts, seeds and avocado… YUM!

All foods that have the Health Starts Here log follow their Four Pillars of Healthy Eating:

– They’re made using the purest whole foods, not the processed foods that many of us are used to!

– The ingredients used are plant based – which means there is fiber (that help keeps you full), protein and phytonutrients!

– They only contain healthy fats such as nuts, seeds and avocados!

– They’re high on the list of nutrient dense (containing the most nutrients) list… they have a great way to measure the super nutritious foods… At Whole Foods Market, in the produce section, the fruits and veggies have an ANDI (Aggregate Nutrient Density Index) score. So say you want to make a brown rice bowl and add some greens, you want the most nutrient dense greens, so you check the ANDI list and see the Kale is higher on the list then Arugula, so you choose that green.

With that being said. If you’re eating veggies, you’re doing good… this just packs a more powerful punch!

So I would like to shout out a big THANK YOU to Whole Foods for making healthy eating much easier!

Whole Foods Market – you won’t believe what they do!

Whole Foods Market Mt Pleasant Customer Advisory Panel – did you know there was such a thing? Well there is, and it’s quite amazing. Whole Foods selects a group of people each year to inform and share information with them about their store. It’s amazing information. You would not believe all the work that goes into making that store so very amazing! Specifically, I’m referencing the Mount Pleasant, SC location.

They want to know what we think. What they can do better. What they are doing that we like. What would we like to see in the future? Each month there is a new topic. The first meeting was PRODUCE. It was EYE OPENING to say the least. After learning of the care that is involved with being a certified organic grocery store, we want to buy all of our groceries at Whole Foods! We are buying more since being on this panel, I guess after you learn all the work that goes into getting the produce where it is, and how the organic produce is treated very carefully. Special cleaning techniques are used in those areas, temperatures are taken as they are taken off the truck, storage is handled separately for organic and conventional fruits/veggies. They are not just inspected by DHEC, they are also inspected by EVERCLEAN because they are a certified organic grocer. It’s an impressive list of accomplishments that they strive for every single day. Quality is number one! It’s no easy task. That store runs like a well oiled machine. There are massive amounts of teamwork involved. No doubt about it!

You know how it is when you buy something that you think will taste good and then you get home and it’s just not your taste? Whole Foods will let you sample just about anything in the store, just find a store associate and ask them if a package can be opened or if you can have a sample. Fruits and veggies aren’t excluded… wonder what that Honeycrisp apple taste like? Wonder no more! They will give you a slice and ahhhh, you will see why they are about the most amazing apple on the planet!

I think a lot about a company that wants to strive, year after year, to make things the best they can be (despite being profitable anyway!)… Whole Foods not only wonders, they care, they WANT TO KNOW, they spend a great deal of money and effort to get our opinions. Just last week we had an entire Thanksgiving Dinner, the topic was PREPARED FOOD, and we tasted all of the sides that are available for Thanksgiving, and let me tell you… YUM! They even send us home with a Whole Foods bag packed with goodies from whatever the current topic is. Brilliant. Now I buy those same products that they gave us. Just think I might have never tried them otherwise! Now I am hooked!

On top of it, the people who work for Whole Foods are about as nice and sincere (not to mention FUN) as they get.

There were better photos to be taken, I was trying not to cause a scene… therefore you are missing photos of their Thanksgiving spread, which was the best EVER! Each and every dish we tasted was out of this world! So if you are wondering about Thanksgiving, give them a call (or order online) and order your Thanksgiving, it couldn’t be easier!

Pompeian Spray Oil – a wicked cool find!

First of all, you aren’t going crazy… you have reached the same blog… art. food. home. by barbara stroud… some changes have been made in the look of the blog, let me know what you think!

Have you read the ingredients in spray oil? You know the stuff you spray baking pans with? Yikes! AND if you’re supposed to steer clear of soy, most of it has soy in one form or another, so this was a welcome sight. There are a few brands now available and this is great news! Keep an eye out for them! Also gluten free for those of you who need that!

Farmer’s Market… the island way!

I have never seen a fresher farmer’s market than the one I saw on Monhegan this year! They were literally picking veggies right before the market opened. The table was set up with beautiful displays. The veggies didn’t last long. *POOF* gone! What a treat!

Wherever you are, treat yourself to fresh fruits and veggies. Check out your local Farmer’s Market, or your local store that may carry local produce!

Recipe: Healthy Breakfast Sandwich!

Quick. Easy. Healthy. Fills you up for hours. How can you beat this?

The Power Breakfast Sandwich 

1 Whole Wheat English Muffin

1 Egg

1 Handful of Arugula (or Spinach)

1 Slice of Extra Sharp Cheddar (or whatever you like).

Toast English Muffin. While it’s toasting heat a small frying pan, crack the egg and give it a quick beat with a fork, sprinkle a little pepper. I try to make it roughly the shape of the English Muffin.  Flip it and cook the other side. When the English Muffin comes out of the toaster, top with Cheese, and then Egg… now it’s time for the handful of Arugula, which adds a nice flavor. Wait a few minutes while the cheese starts to melt.

Ta da! Easy, right?

My new sandwich “recipe”!

I’ve come up with a few new sandwich ideas that are over the top good… I needed something different. Something healthy, but super duper tasty… My new thing here… BROCCOLI SPROUTS, I heard on Doctor Oz how they’re so good for you, throw them on all your sandwiches (well, PB&J? I think not) they’re scrumptious little buggers… Above… I have an open face sandwich.

1 slice 7 sprouted grains bread (freezer section) – toasted

Veggie Cream Cheese (Philadelphia Brand) – spread on the toast… YUM!

Hefty dose of broccoli sprouts on top of cream cheese

Cucumbers, thinly sliced on top… we LOVED this! Also tried it with 1/2 slice of Havarti cheese… GET OUTTA HERE!

This will become the new love of your life!

When you feel an open faced sandwich just won’t cut it, here’s another version… sprouted 7 grain bread, veggie cream cheese, 4 thin slices of cucumber, slice of Havarti cheese, 4 more thin slices of cucumber, and a big handful of that oh so healthy arugula (or broccoli sprouts!), top with another slice of sprouted 7 grain bread toasted. Yipeeee!

Fit Radio… what a difference it makes!

This is one cool app. Fit Radio plays great music, and depending upon the genre/station you choose the BPM (beats per minute) vary. For example, the Top 40 has 128 BPM which keeps you walking/running at a brisk pace for sure! I don’t normally walk with headphones on because I walk with a friend during the week, and my husband on weekends… but for those rare times when I am alone, this gets my legs going as fast as they will go.

It. Was. Fun.  Did I just say that?

This app is available for iPhone/Android and Blackberry devices and your first 3 hours are the premium version for free. If by then you don’t upgrade to the premium version it automatically strips you down to the free version. Their words, not mine… I am still in the premium/free version, so we shall see. From what I’ve read they have excellent customer support, and that my friends, means the world!

Mount Pleasant, SC Farmers Market – look what I made for dinner!

Fred and I missed the Farmers Market in Charleston this past Saturday, so we swung by the Mount Pleasant Farmers Market on Tuesday… Oooowie! We bought some tasty veggies… as you’ll see below! As well as the best brie I’ve ever had! Made for a wonderful dinner!

We were there right when they opened (you have to wait until the bell rings at 3:30PM, vendors are not allowed to sell anything prior to that time because they are located on school property). By the time we left it was really filling with people! So good to see! All good food, what a treat!

Dinner was too good for words… brown rice, butter peas, radishes, corn on the cob (all from the farmer’s market)… and a few slices of baguette from the bakery near us (Normandy Farms) with some brie from the farmers market.

It just can’t get better than this!  It felt so good to eat fresh healthy local food! Catch you back here tomorrow!

There is nothing better fresh local strawberries. To make a quick stop at the Farmers Market is soooo worth it! These strawberries are nothing like the ones you get in the grocery store, they are juicy and sweet and a true delight!

Old Road Mercantile: The World’s Smallest Department Store!

Last week I mentioned a cool new store “Shirtini” located on King Street downtown, Charleston, SC. There is another store next door (same owners) called OLD ROAD MERCANTILE, and it has the most unique items you can imagine. It truly is the “World’s Smallest Department Store”! If you’re in the area, stop by and check it out. Otherwise check out their website (pictured above)… This is just one of the many unique gifts… this is so smart! I bought it. I used it and it’s fabulous… highly recommend…

Swedish Dishcloth… reusable, washable and won’t have that horrible sponge smell!

These come in beautiful patterns, It’s a “dishcloth” that is not a dishcloth. Great for delicate glasses, etc. Perfect for anything. Dries quickly (hence, no bad sponge smell)! Pretty smart, eh?

Ya gotta do what feels right… even if it’s wrong…

I want to start by saying… I am a healthy eater. I read labels. I don’t buy anything with corn syrup, high fructose corn syrup, fillers that are bad, milk from cows treated with rBST, etc. etc.)… now with that said, when I’m sick and absolutely nothing sounds good for days and days I have to go with what my tastebuds want.

I went to the grocery store, which I didn’t think I would live through… I wandered around and picked up a few things that sounded good… fresh ginger, lemon/ginger tea, and… this… I didn’t read the ingredients until after I ate it. It was just as good as I remember 40 years ago, ha ha… I did it, and I’m over it. It got me through a day, ha ha… thanks Captain!
