The BEST and Most Beautiful Christmas Cookies Ever!

These cookies have been a holiday tradition as long as I can remember. We had such fun making these. My mom and dad did all the hard work, we got to decorate – we had to decorate each one individually. Take your time, make it nice, don’t do it quickly (or heap a pile of frosting on top just so you can eat it, hee). Same with the tinsel, remember tinsel? One strand at a time! I think tinsel started out fun and then tested my patience, ha ha…

From what I remember we had a reindeer, a Santa, a snowman and a Christmas tree cookie cutters. If you don’t have a cookie cutter use a glass and decorate them like ornaments! Right now I only have a Christmas tree cookie cutter, it’s my favorite and I haven’t seen another that I like as much (that won’t burn edges, etc) There are so many ways to decorate them! You can limit your colors, like I did, or have a plethora of colors and make them REALLY different!

Let the artistic side in you come out, make that wonderful “Grinch”  green, mix your yellow/blue food coloring to achieve the different colors!

This recipe makes quite a few, but they are so good they are in danger of becoming extinct rather quickly!

Shepherd’s Pie – Great recipe for a cold day!

I have always seen recipes for Shepherd’s Pie, but have never made one. Meat and potatoes, hmmmm… cold weather prompted me to try this. I used a recipe from Food Network that sounded delicious, I made a few changes, I didn’t have mushrooms, so I omitted. I didn’t use as much oil/butter as it called for, and it wasn’t missed. Finally, I upped the amount of beef broth and changed the order of how I prepared this, based on comments that I had read. One detail I left out, is that when you spread the mashed potatoes, you can make fork marks that give ridges that will end up browning nicely. In the images above, I added parmesan to one half in case Fred didn’t like… Next time, Parmesan on both sides, without a doubt. It also made it brown, and I would probably leave it until it browned a wee bit more, although it was absolutely done and so delicious!

UPDATE: THERE IS NOW AN IMAGE, ha ha… I remembered to take a photo this time. Chilly weather is THE PERFECT TIME to make this dish. It warms your very soul!

We were so anxious to try this that I forgot to take a photo of it plated 😳 – wasn’t the first time that happened and I’m sure it won’t be the last. Might have to try to make this again soon to update the images! Corrected :)

Recipe: Fred’s Famous Banana Smoothie… I am hooked!

TIS THE SEASON! It’s officially SMOOTHIE weather! When it turns hot and humid, relief is needed. This fabulous smoothie tastes great and cools you off quickly. After we walk, we usually come in and make a smoothie. This is my all time favorite, and when Fred is home he makes one each morning (in the summer). A nice warm bowl of comfort food… Cooking Light’s highly rated BAKED POTATO SOUP

Cooking Light’s Baked Potato Soup

Sometimes I just want a nice hot bowl of comfort food. This is the ticket. It’s one of the best soup recipes from Cooking Light magazine. The taste is out of this world. It’s not terribly time consuming to make. The last time I made this soup I baked the potatoes while I had the oven on for a meal the day before, so it was quite fast to throw together. This is one of those recipes that makes your eyes roll back in your head, ha ha… too tasty! Trust me, you will love it. The only the I did differently is the I halved the amount of flour so it wouldn’t be quite so thick. I think the essential part of the soup is adding cheese (I used 2% Cracker Barrel Extra Sharp), crumbled CRISPY bacon and green onions (or chives). Let me know how you like it! Baked Potato Soup

Ingredients

  • 4 baking potatoes (about 2 1/2 pounds)
  • 1/4 cup all-purpose flour
  • 6 cups 2% reduced-fat milk
  • 1 cup (4 ounces) reduced-fat shredded extrasharp cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup reduced-fat sour cream
  • 3/4 cup chopped green onions, divided
  • 6 bacon slices, cooked and crumbled
  • Cracked black pepper (optional)

Preparation

  • Preheat oven to 400°.
  • Pierce potatoes with a fork; bake at 400° for 1 hour or until tender. Cool. Peel potatoes; coarsely mash. Refrigerate if not using same day.
  • Lightly spoon flour into dry measuring cups; level with a knife. Place flour in a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 cup cheese, salt, and 1/2 teaspoon pepper, stirring until cheese melts. Remove from heat.
  • Stir in sour cream and 1/2 cup green onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Ladle 1 1/2 cups soup into each of 8 bowls. Sprinkle each serving with cheese, green onions, and crispy bacon. Garnish with cracked pepper, if desired.

This is a delight and makes quite a bit. Oh, do I miss the Cooking Light magazine…
