Tips for Making a Fabulous Tuna Melt!

fullsizeoutput_1f75

Sometimes it’s nice to have a quick and uncomplicated meal – this is great for lunch or for dinner! A tuna melt has flavors that meld together and create the ultimate eating experience!

Of course anyone can make a tuna melt, but sometimes you’ll read one tip that will change your life (OK, that may be a bit dramatic). I rarely make it the same way twice, add what you like!

Tuna Melt Tips

“Use good bread” as Ina Garten would say. The better your ingredients, the better your result. I don’t think a tuna melt comes out quite right with grocery store bread. It’s too soft. Find a good rustic bread (Semolina, Sourdough, Farm bread, etc.). Toast it lightly.

Make your tuna salad. I use a can of tuna, drained (for two of us), diced celery or red onion, or both, and a plop of Hellman’s Canola Mayo. I add a few shakes of dill, and pepper.

Here’s where you can get creative.

We have had an amazing tuna melt at Dean & Deluca, and they spread the bread with Dijon mustard before they add the tuna. Sometimes I use it and sometimes I don’t.

Cheese – oh yeah, can’t have a MELT if there is nothing to melt! I’ve used sharp cheddar and pepper jack. Love them both, depends on my mood.

Sliced tomato, if they’re in season, GO FOR IT! I put the tomato on top of the tuna and then top with cheese.

Turn your broiler on (I have a high/low setting, I use HIGH). Place the tuna melt on a cookie sheet to put under the broiler, be careful if you use the top rack, it can be too close, I have used it, but prefer the second rack from the top.

👁KEEP AN EYE ON IT. It can go from almost done to burnt to a crisp in no time, it’s easy to get distracted… Don’t do it!

Owie! ENJOY, and I’ll catch you back here tomorrow!

Paint color for walls – Something dramatic!

Wall color...

Old Navy by Benjamin Moore – Paintings, see below…

We love to change paint colors. It’s a problem. We probably need therapy, but it makes such a difference for a pretty insignificant amount of money. We love the all white look. LOVE IT! The creams and whites. We tried it. Painted the living room, bedroom, bathroom, and it was horrible. Capital H Horrible. The bathroom is fine, but the bedroom and living room, ugh. At first I thought I LOVED it, my eye went straight to the window and grabbed the green from the trees. Beautiful. Then we hung our art, put back our rugs and oh. Hmmm. Not so much. It didn’t flow.

We have had a medium brown(Kuba by Ralph Lauren – no longer made) in a few rooms and a dark grey in the dining room. We bought a sample can of Benjamin Moore paint (I love how they do that). I painted the room I thought we would start with, the dining room. A nice, dark navy. This is the brightest time of day, it usually looks more like the left hand side versus the right hand side.

I thought the brown worked so nicely with all of our paintings, but whoa, I didn’t realize how there is blue in all the paintings. Sweet! We have since decided not to start with the dining room, so the above has since been painted back to Benjamin Moore’s Kendall Charcoal. The color above is Old Navy – we may keep it or try it a bit darker (custom color, they’re so good at) – although, living with this blue, I think we want it to read blue and not black, so we may go with Old Navy… It’s good to live with it for a while – I will keep you updated!

Coming soon…

New color... coming soon!

A fresh post for Saturday!

This chair looks rather angelic in the sunshine, ha ha… Here is a look at what’s to come… Benjamin Moore in a Navy color (we think we know which one, but haven’t decided absolutely). It’s currently a Benjamin Moore match to an old Ralph Lauren color KUBA (in the Safari collection). We’ve loved this color, but now… need it to be gone! I’m dying for some navy walls… How sharp will that be?? Bits of navy in the rug, all the paintings have blue (nine paintings in this small room) – I can’t wait! I love the white against the navy. Is it ever sharp! Right now the hot color is SHADOW by Benjamin Moore, but it’s a little too purple for my taste, although I’ve seen it used on doors, etc. and it’s so striking!

Will send an image of the final result once we get to that point!

For those of you who subscribe to this blog, you may think that today’s post looked familiar. It did to me too… well, that’s because I posted it six short days ago. Six. Sigh… I think I was rearranging posts and this image was used twice. Nice… ugh! Please forgive.

Quick Timesaving Freezer Tip

Here are just a few ideas of how to use your freezer to make things very convenient and ready in a snap! (Did I just say Snap, Ugh?)

The key is using your cookie sheet. Whatever you are freezing, place it on a piece of wax paper on a cookie sheet and place in the freezer until solidly frozen (hours or over night) – then you can transfer to a freezer bag!

I make Charlie pumpkin “dog cookies”, by simply putting small spoonfuls of pumpkin (canned) onto the wax paper – then when I want to use, I take one out and hold it while he eats (he loves it!) or place it in his dish until it defrosts, then add his food.

Tomato paste, I’m sure you’ve had those recipes where you just need a tablespoon or two, what are you to do with the rest of the can? Even the tomato paste that comes in a tube has a fairly short expiration date once opened. I freeze in tablespoons and once frozen, pop into a freezer bag (don’t forget to label!) and use in recipes. It is SO HANDY!

Cookies ready to back at a moments notice. Chocolate Chip Cookies are another good recipe to freeze. I bake some, then I freeze some on a cookie sheet, then usually the next day because I forget about them, I toss into a freezer bag and *POOF* it’s like you’ve slaved away all day, ha ha…

Of course those are just a few examples. Also basil freezes well in a little water in an ice cube tray, leftover coffee freezes well in an ice cube tray too, perfect to add to your iced coffee!

What size house plan are you most interested in? Results of the poll…

House Plan Poll

Several months ago I posted a poll asking what size house plan you were interested in. I wasn’t just curious, I want to target the size that most people find appealing – with other sizes thrown in since not everyone likes the same thing (thank goodness, right?)! Thank you to those who participated!

Luckily, the answer was between 1,000-2,000 square feet, which is the range I usually am near. This is great feedback!

Here are the results:

I will be running this poll again in 2017! Catch you back here tomorrow!

MERRY CHRISTMAS!

Merry Christmas!

This photo is from a past Christmas in Michigan. Fred’s parents drove to MI – It was so beautiful, the snow was falling and so perfect for them to see!

The older you get the more Christmas is about memories much more than what may be under the tree when you wake up on Christmas Day. Most of us have everything we need, and the things that we want cannot be purchased.

Share a smile with someone (and some cookies too!) – it will help make the world a better place!

MERRY CHRISTMAS! 🎄

Christmas Eve… Already!

img_0252

I know! I know! It’s Christmas Eve already! Where does the time go? This little flash from the past photo was five years ago. Five!

Time passes faster every day, so be good, do good – live well, live happy, help one another – we’re only on this planet for a short time.

Life is too short to live any other way…

Merry Christmas Eve! 🎄

Be the good…

Mebkin Abbey, Moncks Corner, SC

It always helps to put things into perspective – as I see people rush around and stressed, I think this post may help a little… I hope…

Come sit your weary bones down, sit a spell… relax and calm your thoughts. There is so much going on this time of year, sometimes we need to get in check with things and slow down and realize that if everything doesn’t get done, it’s OK. Always remember that living a good life isn’t about what you have but how you treat others. So lend an ear, listen to a friend, don’t be too quick to judge.

Everyone is going through something (click here to see a great video!) – so if you encounter someone who seems out of sorts, sad, mad, or just not friendly, don’t just assume the worst – pass along a smile or a kind word (or both!!). Help make someone’s day – it’s a tough world and we need to help each other get through it.

Go out and be the GOOD that you want to see in the world!  🙏

First day of Winter…

Tree

My calendar says WINTER BEGINS… It depends on where you live from what I’ve read, some places it’s today and others it may be tomorrow, in any case the Winter Solstice is the shortest day of the year, the day when the sun is up for the shortest amount of time. After this, days will begin to get longer – hard to believe, ha ha… it’s a slow progression no doubt, one that I am thankful for!

This is my desktop image for the month of December, I just love it! This is a tree that my dad has made from the table and umbrella that sits near the river – how clever is that? Just look at that sky! LOVE IT! This image brings good memories of a happy holiday season!

Happy Birthday Dad (AKA Joe)!! Wishing you the happiest of birthdays, and many, many, many more! xo me ❤️

Wonder were I get it?

I wonder where I get my love of photography from? Snap, snap, snap… thank goodness we don’t have to buy film any longer, ha ha…
